The shopkeeper is likely to use as few coins as possible, and to start with the smaller value coins:
£5.74 plus 1p is £5.75; plus 5p is £5.80; plus ... .

(The shopkeeper probably does not go as far as to total the change, as it is sufficient just to hand out the correct coins. However, when this approach is used to find the actual difference between two numbers or quantities, it is commonly called 'adding on' or 'the shopkeeper's method'.)
